    PCI DSS 9.4 Visitor Log

    Tired of looking around for a template that fits PCI?  Visitor logs are simple yet so many hunt for the right way to format their log to comply with section 9.4 of PCI DSS. Not exactly sure why it’s so difficult but I did the search myself and found nothing close to what should be.  So that said, depending on where you put this log, there is only a single modification I might recommend, if you have visitor badges to assign (and you should) – add a column for visitor badges or add to description of a column the visitor badge numbers you hand out.  If the visitors do not…

    Marine Breakfast or S.O.S.

    “Marine Breakfast” a.k.a. S.O.S – brings back memories …. Here’s what you’ll need: (Serves 4-8 civies or two hungry Marines) 1/2 lb. Ground Beef (ground chuck for flavor) <– I’ve used a mix of ground sausage at times as well 1 tbs. Bacon fat (lard or butter if no bacon fat) [you don’t have bacon fat?!?] 3 tbs. Flour 2 cups Whole milk (add more to thin, less for thick) 1/8 tsp.     Chocolate and Marshmallow Pancakes

    Not a huge fan of Chocolate myself but I do like creme brulee and these … the little marshmallows … make this a tasty weekend pancake treat! Here’s what you’ll need: Mix together: 1 1/2 cups flour 3 1/2 ts baking powder 1 TB sugar 1 1/4 cups milk 1 large egg 3 TB butter (melted) Now to pull it all together: Pour the pancake batter into pan (or on your griddle), place handful of semisweet chocolate chips and the little marshmallows on top of pancake batter.  Now cover with another layer of pancake batter to coat.     Parmesan Baked Pork Chops

    What you’ll need: 4 boneless pork chops 1 T. olive oil 1 C. parmesan cheese (I used Kraft) 1 C. Italian bread crumbs 1 tsp. pepper 1 tsp. garlic powder On a plate combine the last 4 ingredients. Rub the pork chops with olive oil and then dip (coat) each one in the cheese mixture. Press the mixture over the pork chops to make sure they are well covered in it. Line a pan with tin foil and spray with cooking spray. Place the pork chops on the pan and bake at 350 degrees for 40-45 minutes.

    My Protein Shake

    So I’m sure you all have your favorite blends you make and some of us have done the straight water and protein or “flavored” protein shakes. I’ve decided to get back to my protein shake routine. With that, here is one recipe I find quite tasty: 3/4c Orange Juice (or I often use filtered water) 1c Strawberries 1 banana Your brand of protein added (I use EAS) per directions ice cubes to your liking (I usually only add 3-4, if any) Blend until smooth and enjoy!     Quick Pie Crust

    This is a simple and quick pie crust to make for when you are in a pinch. Here’s what you’ll need: 2 1/2 cups flour 1/2 tsp of salt 1/4 lbs of lard (Crisco is my preferred) 6 Tbsp of margarine (or add more Crisco) 1/4 cup of cold water Now to pull it all together: Mix together the flour and salt Next cut in lard and margarine until in small pieces with a fork After you have the small pieces start adding the cold water a little at a time continuing to mix with the fork.  Once mixed together well form into a ball Divide in half Lightly flower…

    Mmm … rhubarb pie! I even left a little spot in the recipe for you to add strawberries if you’d like Let’s start with preheating the oven to 400 while we get everything together and prep’ed!     Fruit Salsa
