Mmm … rhubarb pie!
I even left a little spot in the recipe for you to add strawberries if you’d like
Let’s start with preheating the oven to 400 while we get everything together and prep’ed!
Here’s what you’ll need:
double sided pie crust, see here
1 cup sugar
3 Tbsp flour
1/8 tsp salt
3 tsp of fresh fruit (might I suggest the earlier mentioned strawberries)
2 cups rhubarb, diced
1 Tbsp butter
1/4 cup sugar
1/4 cup of milk (I use 2% but recommend whole)
Now to pull it all together:
Combine sugar, flour, salt, fruit, and rhubarb stirring well to coat all.
Turn the mixture out into the pie crust and add the butter in small pieces throughout
Cover with the top crust
Mix the milk and sugar together and brush the top crust with this mixture
Make sure to slit top/poke holes/vent with smiley face … just vent the top somehow
All that is left is 40 minutes to bake! If you’re oven is a bit off (or you are at a higher altitude) start watching it just before this and take out when the top is lightly browned.
