Fruit Salsa

A get together/party favorite has become the fruit salsa I make from time to time.  Before I forget I will make sure to add a section on how to make your own “chips” to go with it as well.  You can play with a twist by adding a teaspoon of cinnamon if you so desire into the fruit salsa but the “chips” usually have enough cinnamon on them.

What you’ll need to get started:
2 kiwi’s
2 Red Delicious Apples
8 ounces red raspberries
1lb strawberries
2 Tablespoons white sugar
1 Tablespoon brown sugar
3 Tablespoons fruit preserves (I use the less sugar raspberry preserves myself)

Now to put it all together:
Peel and dice the kiwis and apples.
Put all of the above in a large bowl and mix all ingredients together.
Cover and place in a fridge to chill for at least 15 minutes

Now for the “chips”
What you’ll need to get started:
Preheat oven to 350 degrees
10 or so tortillas
1 stick melted butter
1/2 Tablespoons cinnamon
1-1/2 Tablespoons white sugar

Now to put it all together:
lay out the tortillas
Mix the cinnamon and sugar together
Using a brush, brush the tortillas with butter
With a pizza cutter you can easily cut the tortillas into desired sizes (I usually cut 4 way)
Place on a cookie sheet (I cover it in tin foil for easier clean-up later)
Now sprinkle with cinnamon and sugar
Place in the preheated oven for about 10 minutes
Let cool

Serve the chips with the fruit salsa and …

Side Note:  I always seem to need more chips and so double the amount above depending on the function.
