Questions about my (Dad’s) smoked brisket recipe are … difficult to explain. I’ve played with many recipes, wood types, cooking methods, and spices. I have a few thoughts here that I need to explain first. Then we’ll get into tips and such. For the moment, please take a look at the recipe I wrote below.

Overnight cinnamon rolls, or a take on them anyhow. We all get handwritten notes, index cards, or emails from family. We take the best of them and find a way to hold on to them, maybe even change a few things about them along the way. This is a great make ahead if you want to have cinnamon rolls when you’d like, or for a small family breakfast, or better yet make a double batch and have family over during the holidays.

This is a little applesauce recipe I thought I’d lost but my brain ACTUALLY remembered. So now before it’s gone I figured I should share it here.Please let me know your thoughts. Hint: Some might have found this recipe not as sweet as mine is sometimes … that’s because I, on occasion, have been known to use a rounded 1/3 cup of brown sugar. 😉 This is a little applesauce recipe. If you don't mash at the end you could even use as apple pie filling, amongst other things.

“Marine Breakfast” a.k.a. S.O.S – brings back memories …. Here’s what you’ll need: (Serves 4-8 civies or two hungry Marines) 1/2 lb. Ground Beef (ground chuck for flavor) <– I’ve used a mix of ground sausage at times as well 1 tbs. Bacon fat (lard or butter if no bacon fat) [you don’t have bacon fat?!?] 3 tbs. Flour 2 cups Whole milk (add more to thin, less for thick) 1/8 tsp. Salt Pepper (to taste) 8 slices of dry toast Now to pull it all together: Using a large skillet (12″-14″), crumble and brown the ground beef with the fat and salt, remove the pan from the heat and let cool slightly.…

Not a huge fan of Chocolate myself but I do like creme brulee and these … the little marshmallows … make this a tasty weekend pancake treat! Here’s what you’ll need: Mix together: 1 1/2 cups flour 3 1/2 ts baking powder 1 TB sugar 1 1/4 cups milk 1 large egg 3 TB butter (melted) Now to pull it all together: Pour the pancake batter into pan (or on your griddle), place handful of semisweet chocolate chips and the little marshmallows on top of pancake batter. What you’ll need: 4 boneless pork chops 1 T. olive oil 1 C. parmesan cheese (I used Kraft) 1 C. Italian bread crumbs 1 tsp. pepper 1 tsp. garlic powder On a plate combine the last 4 ingredients. Rub the pork chops with olive oil and then dip (coat) each one in the cheese mixture. Press the mixture over the pork chops to make sure they are well covered in it. Line a pan with tin foil and spray with cooking spray. Place the pork chops on the pan and bake at 350 degrees for 40-45 minutes.
